Made with fresh vegetables like carrots, onions, and cucumbers, and mixed with cream cheese and mayonnaise for a creamy texture, this Vegetable Spread is a treat for the taste buds. What’s more, it’s versatile – you can spread it on crackers, toast, or even use it as a dip for your favorite chips. I personally love it on whole grain crackers topped with olives. It’s the perfect blend of crunchy, creamy, and tangy. But what makes this recipe truly special is its simplicity. All you need is a handful of ingredients and a few minutes out of your day. Ingredients

  • 1 large cream cheese
  • 3 small carrots
  • 1 small onion
  • 1 small cucumber
  • 3 Tbsp. mayonnaise
  • salt/red pepper

Mixing Procedure

  1. Grind or grate the 3 vegetables.
  2. Drain well.
  3. Add mayonnaise to softened cream cheese and mix well.
  4. Add well drained vegetables, salt and red pepper.
  5. Spread on crackers.
  6. Top with olives or pimentos.

First things first, I had to grind or grate the three vegetables. Now, I’ll be honest, there’s something oddly satisfying about the rhythmic grating of a carrot. But then you get to the onion and, oh boy, the waterworks begin. It’s like watching the finale of a sad movie; there I was, a blubbering mess in the middle of my kitchen, all for the love of veggie spread!

The Draining Drama

Once my eyes had dried, and my dignity was somewhat restored, it was time to drain my vegetable confetti. Let me tell you, draining vegetables is an art in itself. The Final Touches

Finally, I added the well-drained vegetables, a dash of salt, and a sprinkle of red pepper to the mix. The salt and pepper really bring out the flavor of the vegetables and add a bit of a kick to the spread. Once everything was mixed well, I spread it on some crackers and topped it off with some olives. And voila! A delicious vegetable spread made from the remnants of my fridge.

The Verdict

So, how was it? Well, let me tell you, it was an absolute hit! The creaminess of the cheese, the crunchiness of the carrots, the subtle spice of the red pepper, and the freshness of the cucumber all came together to create a symphony of flavors.
