Power Cookies: A Healthy and Delicious Treat

Cookies have a pretty standard reputation: sweet, decadent, and a little bit naughty. But what if I told you that cookies can also be a source of healthy energy? Enter: Power Cookies. These aren’t your typical sugar-loaded treats. They’re packed with nutrients and flavor, thanks to ingredients like oats, coconut, raisins, and nuts. The result? A cookie that’s just as satisfying as it is nutritious. These cookies have a great balance of sweetness and nuttiness, with a chewy texture that makes them super satisfying. Plus, they’re easy to make and perfect for a quick breakfast on the go or an afternoon snack. I love these cookies because they’re a testament to the fact that healthy eating doesn’t have to be boring or flavorless. So, let’s get baking and make some Power Cookies!

Ingredients

  • 2 c. dark brown sugar
  • 2 c. granulated sugar
  • 3/4 c. butter, softened
  • 1 c. vegetable shortening
  • 4 eggs
  • 2 tsp. vanilla
  • 3 c. all-purpose flour
  • 2 tsp. salt
  • 2 tsp. baking soda
  • 3 c. uncooked oats
  • 2 c. coconut
  • 2 c. raisins
  • 1 c. chocolate chips
  • 1 c. chopped nuts

Baking Instructions

  1. Cream sugars, butter and shortening.
  2. Beat in eggs and vanilla.
  3. Combine flour, salt and soda; beat into first mixture. Add remaining ingredients; knead mixture.

The Power Cookie Saga Begins

Well, it all started one faithful Saturday when I decided to put my apron on and embark on a gastronomic journey. A journey to prepare what I now refer to as Power Cookies. Why the name, you ask? Let’s just say these bad boys pack more punch than a caffeine-loaded energy drink.

Meet the All-Stars

To get started, we had to assemble the team. And by team, I mean a hodgepodge of ingredients that you’d typically find tucked away in the dark corners of your pantry. We’re talking 2 cups of dark brown sugar and the same amount of granulated sugar. I know. It’s like a sweet tooth’s dream come true. Then there’s 3/4 cup of butter, softened just enough to make it malleable, and 1 cup of vegetable shortening. Add four eggs (yes, FOUR), 2 teaspoons of vanilla, and you’ve got yourself the base for a killer dough.

The Mix-Up Mania

Next comes the fun part. You need to cream the sugars, butter, and shortening together. Now, when I say cream, I don’t mean casually stir while you’re sipping on your latte. I mean really get in there and mash things up until your arm feels like it’s going to fall off. Then, still nursing your soon-to-be-bionic-arm, you have to beat in the eggs and vanilla.

Adding the Magic

When you’ve finally regained control over your limbs, it’s time to bring in the supporting cast – 3 cups of all-purpose flour, 2 teaspoons of salt, and 2 teaspoons of baking soda. You need to combine these and beat them into the dough. And yes, you read that right, I said beat. Not mix. Not stir. Beat. Consider this your therapy session for the day.

The Final Countdown

Just when you think you’ve climbed Mount Everest and can finally see the summit, it’s time to knead in the remaining ingredients. You’ve got 3 cups of uncooked oats (because who needs to cook oats, right?), 2 cups each of coconut and raisins (because why not?), and 1 cup each of chocolate chips and chopped nuts (because we’re making cookies, not a salad).

The Unforeseen Workout

This is the part where I should probably warn you – this dough is heavy. Like, deadlift-in-the-olympic-category heavy. You’ll need to summon all your strength and knead this behemoth of a cookie dough. If you’ve been slacking on your gym sessions recently, consider this your penance.

Victory is Sweet (and a little crunchy)

And there you have it, my friends. That’s how you prepare Power Cookies. They’re not just cookies, they’re a whole experience – a journey through the land of confectionery, a test of your baking skills, and a workout session all rolled into one.
