Peanut butter and pie – two of my absolute favorite things in the world. Combine them together, and you get a match made in heaven – the Peanut Butter Cream Pie. This dessert is a delightful concoction of rich, creamy peanut butter, a hint of cream cheese, and a light, fluffy whipped topping, all nestled in a crunchy, low-fat pie crust. And the best part? It’s low-fat! So, you can indulge in this creamy treat without any guilt. But don’t let the ‘low-fat’ tag fool you. This pie is just as rich, creamy, and scrumptious as its full-fat counterparts. The secret lies in the use of fat-free cream cheese, reduced-fat peanut butter, and Cool Whip lite. These ingredients not only make the pie healthier but also add a unique, light texture that makes every bite melt in your mouth. I love this recipe because it’s incredibly easy to make. With just a few simple steps, you can whip up this delectable dessert in no time. Plus, it’s a great way to satisfy your sweet tooth without going overboard on the calories. So, are you ready to delve into the delicious world of Peanut Butter Cream Pie? Let’s get baking!

Ingredients

  • 3 oz. fat-free cream cheese
  • 2 Tbsp. skim milk
  • 1 c. powdered sugar
  • 1/2 c. reduced-fat peanut butter
  • large container Cool Whip lite
  • low-fat baked pie shell

Baking Instructions

  1. Combine cream cheese, milk and peanut butter until smooth. Stir in sugar.
  2. Mix in Cool Whip.
  3. Pour into pie shell. Refrigerate several hours.

The Unforgettable Peanut Butter Cream Pie Extravaganza

Let me tell you, if there was a competition for the most ‘accidentally extravagant’ chef, I’d be leading the pack. But let’s not get ahead of ourselves. Today’s tale involves my attempt to whip up a Peanut Butter Cream Pie. Sounds simple, right? Let’s dive in.

The Cream Cheese Conundrum

The first step was to grab my cream cheese. Now, the recipe calls for 3 oz. of fat-free cream cheese. I don’t know about you, but I’ve never been good with measurements. I mean, how many cheese slices make up 3 oz? And who decided that cheese should even be sold by the ounce? Long story short: I ended up with a cream cheese mountain. But hey, more cream cheese, more fun, right?

Milk and Peanut Butter Tango

Next up, I needed to add 2 Tbsp. of skim milk and 1/2 c. of reduced-fat peanut butter. Now, I’ve always had this strange fascination with peanut butter. It’s like a magical substance that can transform anything into a heavenly treat. I mean, have you ever tried peanut butter and pickle sandwiches? No? Just me then. Anyway, while I was in my peanut butter trance, I ended up pouring milk like it was a waterfall. Let’s just say, my cream cheese mountain turned into a creamy river.

Sweetening the Deal with Powdered Sugar

You can’t have a Peanut Butter Cream Pie without a little (or a lot) of sugar. So, in goes the powdered sugar. Now, I don’t know if you’re aware, but powdered sugar has a mind of its own. One minute you’re carefully spooning it in, the next minute – POOF – it’s a winter wonderland in your kitchen. And that, my friends, is how I discovered I like my kitchen counters with a dusting of sugar.

Enter the Cool Whip Lite

Now, the Cool Whip lite was the real game-changer. I mean, it’s like a cloud of sweet, whipped delight. The moment you open the lid, you’re in dessert heaven. After a few ‘taste tests’ (okay, several… okay, maybe half the container), I stirred in the rest of the Cool Whip. Note to self – licking the spoon is mandatory, but maybe wait until after it’s out of the mixing bowl.

The Low-Fat Baked Pie Shell Affair

Finally, it was time to pour my ‘masterpiece’ into the low-fat baked pie shell. Now, this should have been the easiest part. But alas, my clumsy hands had other plans. Let’s just say the pie shell got to know the kitchen floor intimately. Thankfully, I had a spare. A pie shell, not a kitchen floor.

The Waiting Game

With the pie now safely chilling in the fridge, all that was left was the waiting game. They say patience is a virtue, but whoever said that clearly never had to wait for a Peanut Butter Cream Pie to set.

So there you have it, the tale of my Peanut Butter Cream Pie extravaganza. It may not have been the smoothest of journeys, but boy, was it worth the wait. And remember, in the kitchen, it’s not about the destination, it’s all about the hilariously messy journey.
