Coconut Cream Pie – A Low-Calorie Delight!

In my quest to find delicious yet guilt-free desserts, I stumbled upon this recipe for a Low-Calorie Coconut Cream Pie. I’ve always been a fan of coconut cream pies – their creamy richness, the flaky crust, the tropical aroma of coconut – it’s a dessert that never fails to bring a smile to my face. However, traditional coconut cream pies can be quite heavy on the calories, which isn’t ideal when you’re trying to maintain a healthy diet. So, I decided to give this classic dessert a healthy twist without compromising on the taste. Using sugar-free vanilla pudding and lite Cool Whip, I’ve managed to create a coconut cream pie that’s low on calories but high on flavor. The best part? It’s super easy to make! In this blog post, I’ll share with you this wonderful recipe and some tips on how to make it perfectly. Ingredients

  • 1 baked pie crust
  • 2 boxes sugar-free instant vanilla pudding
  • 1 c. coconut
  • 3 c. low-fat milk
  • 4 oz. Cool Whip (lite)

Baking Instructions

  1. Mix pudding mix with 3 cups milk. Add coconut. Pour in baked or graham pie crust. Cover with Cool Whip. Sprinkle with toasted coconut. Keep in refrigerator.

The Great Pie Escapade of ’21

Once upon a time, in a kitchen not too far away, I found myself on a quest. A quest to create the most delicious, mouth-watering, and yes, low-calorie Coconut Cream Pie known to mankind. I had my trusty apron, a sense of humor that never failed me, and of course, the most important thing for any culinary journey – ingredients.

The Beginning – Gathering the Troops

My band of merry ingredients was an interesting lot. My first recruit was a baked pie crust, the unsung hero of any pie mission. Then came two boxes of sugar-free instant vanilla pudding. You might think, “Sugar-free? Really?” But trust me, this isn’t just any pudding; it’s the undercover agent of desserts – low on calories but high on taste. Then there was the coconut, the star of the show, who strutted in boasting a full cup of tropical goodness.

The Plot Thickens – With Low-fat Milk

The next ingredient was 3 cups of low-fat milk. Now, milk and I have a love-hate relationship. I love it, it hates my waistline. But today, we were on the same team. We had a common goal, and that was to create a pie that wouldn’t require me to invest in a new pair of jeans. Lastly, there was 4 oz. of Cool Whip lite, the fluffy, creamy sidekick that no pie should ever be without.

The Action Sequence – Mix, Pour, and Cover

With the cast ready, it was time for the action. First, I mixed the pudding mix with the low-fat milk. The pudding tried to resist, throwing up little puffs of dust, but the milk calmed it down. With the pie finally prepared, it was time for it to chill. Literally. I placed it in the refrigerator, where it would gather its strength and flavors for the final showdown. The waiting was the hardest part. But as they say, good things come to those who wait.

After what felt like an eternity (read: a few hours), it was time. The pie was ready. I took a bite and I swear, I could hear the heavens sing. It was creamy, it was coconutty, it was… perfect.
