I absolutely love salads! They are versatile, easy to put together, and the best part? They are healthy! Today, I want to share with you a recipe that has become a staple in my kitchen – the Light And Crunchy Chicken Salad. This salad is an interesting mix of refreshing flavors and textures. I love how the cubed white chicken meat adds a satisfying protein element, the diced apples provide that subtle sweetness and crunch, the green pepper and celery add a fresh, raw taste, and all these are perfectly brought together by a low calorie Italian salad dressing. The dressing adds that tangy kick that ties all the flavors together and elevates the salad to a whole new level. This salad has its origins in American cuisine, where salads are often enjoyed as a light meal, especially during the hot summer months. But honestly, I love having it all year round! Whether as a quick lunch or a light dinner, it never disappoints. What I especially love about this recipe is its simplicity. The ingredients are easily available, and the method is straightforward. Plus, you can always add or remove ingredients to suit your preferences, making it a truly versatile recipe. I can’t wait for you to try it!

Ingredients

  • 2 c. cubed, cooked chicken (white meat)
  • 1/2 c. unpared diced apple
  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. chopped celery
  • 1 Tbsp. finely chopped onion
  • 1/4 c. bottled low calorie Italian salad dressing
  • 6 slices lite-line cheese (flavor your choice)
  • lettuce leaves

Salad Assembly

  1. In medium bowl, combine all ingredients (except cheese).
  2. Mix well.
  3. Cover and chill well.
  4. Just before serving, add cheese. Serve on lettuce.
  5. Garnish with apple slices and pepper rings. Refrigerate leftovers.
