Today, I am thrilled to share with you one of my all-time favorite comfort food recipes – the Corned Beef Hash Casserole. This dish is a crowd-pleaser, rich in flavor and quite easy to prepare. It’s the perfect go-to recipe when you need to whip up a substantial meal without spending hours in the kitchen. The Corned Beef Hash Casserole is a classic dish that brings back fond memories of family gatherings and hearty meals around the dining table. The main ingredients – corned beef hash, potatoes, and creamed corn – combine to create a wonderful balance of flavors and textures. The creamed corn adds a touch of sweetness, the corned beef hash brings in the savory element, and the potatoes provide a hearty base. The golden layer of bread crumbs on top adds a delightful crunch that contrasts beautifully with the creamy filling. This recipe is also quite versatile. You can add other ingredients like bell peppers or cheese to give it your own twist. I absolutely love this Corned Beef Hash Casserole, and I’m sure you will too!

Ingredients

  • 3 to 4 potatoes, sliced
  • 1 onion, sliced
  • 1/4 c. canned milk
  • butter or oleo
  • 1 can corned beef hash
  • 1 can creamed corn
  • 1 1/2 c. bread crumbs

Baking Instructions

  1. Layer potatoes and onion in bottom of baking dish.
  2. Dot with butter or oleo.
  3. Add salt and pepper.
  4. Cover with corned beef hash.
  5. Follow with creamed corn.
  6. Top with bread crumbs.
  7. Cover and bake at 350° for 10 minutes.
  8. Uncover and bake 25 minutes more.

Total cooking time: 45 minutes

Hear me out, folks. I cooked up a storm yesterday, and the star of the show was The “Mash-Up” Corned Beef Hash Casserole. Sounds exotic, right? It was a hot mess, but in a good way!

The Ingredient Hunt: A Thrilling Tale

Now, it all started with me rummaging through my kitchen for the necessary ingredients. There I was, hunting for 3 to 4 potatoes, an onion, and my trusty canned milk. I had a minor panic attack when I couldn’t find the butter. Who loses butter? Apparently, I do. But fear not, I found it hiding behind my leftover pizza, probably plotting an escape attempt.

The Great Potato-Onion Layering Showdown

Once my ingredients were assembled, it was showtime. The first step: layering the potatoes and onion in the bottom of the baking dish. This might sound simple, but let me tell you, it was like playing Jenga with slippery discs. Each slice of potato was a rogue agent refusing to stay put, and the onions? Onions were just there for moral support, I guess.

Then came the butter or oleo. Now, the recipe said to “dot” the layers with butter. I mean, how do you “dot” with butter? I decided to interpret this as “throw butter around and hope for the best”.

The salt and pepper application was a breeze. Just kidding. It was like a snowfall in reverse. Too much here, too little there. I was orchestrating a symphony of spices, folks.

Corned Beef Hash: The Unlikely Hero

Covering this flavorful disaster with corned beef hash was satisfying. It felt like I was burying my mistakes under a layer of deliciousness.

Creamed Corn: The Plot Thickens

Just when I thought I was in the clear, the creamed corn entered the scene. It oozed and spread, like an alien life form claiming new territory.

Bread Crumbs: The Finishing Touch

Then, the pièce de résistance: bread crumbs. The recipe called for 1 1/2 cups, but I went rogue and just eyeballed it. It looked like my casserole was getting a tan at the beach.

After preheating the oven to 350°, the casserole went in, all covered up, for a quick 10-minute bake. Uncovering it and baking for 25 minutes more felt like the longest wait of my life. I swear I could hear it sizzling, playfully taunting me.

When I finally took it out, it was a sight to behold. The golden-brown top was like a crisp autumn morning and it smelled like heaven. And the taste? Pure, unadulterated comfort food.
