Fruit Medley – A Refreshing Summer Dessert

Looking for a refreshing dessert that’s also healthy? Our Fruit Medley is the perfect recipe for you! This dessert is packed with delicious fruits and topped with lime sherbet, making it the ultimate treat for hot summer days. Let’s get started!

Ingredients

  • 3 Tbsp. tapioca
  • 1 c. water
  • 1/2 c. sugar
  • 1 1/2 c. water
  • 1 (6 oz.) can frozen orange juice, thawed
  • 1 (11 oz.) can Mandarin oranges, drained
  • 1 (16 oz.) can peach slices, cut in half and drained
  • 1 (16 oz.) bag frozen whole strawberries, thawed
  • 2 large bananas
  • lime sherbet

Preparation Steps

  1. Allow tapioca, 1 cup water and sugar to stand 5 minutes, then cook until clear.
  2. Add 1 1/2 cups water, orange juice, oranges and peaches.
  3. Chill well, even overnight.
  4. Before serving, add strawberries and bananas.
  5. (Add fruit early enough to allow flavors to blend.)
  6. Top with lime sherbet in fruit or sauce dishes.
  7. Serves 8.

The Tapioca Tango

Let me set the stage for you. It was a regular Tuesday, nothing out of the ordinary. You know, except for the fact that I was about to embark on a culinary expedition that would have made even Indiana Jones quake in his boots. Armed with nothing more than 3 Tbsp. of tapioca, 1 c. of water, and 1/2 c. of sugar, I was on a mission. A mission to create a Fruit Medley that would be remembered for generations to come.

The first step was simple enough. I let the tapioca, water, and sugar stand for 5 minutes. It was a real test of patience, like watching paint dry or waiting for a pot of water to boil. I kept poking at the mixture, half expecting it to do a little dance or, at the very least, bubble. But alas, it just sat there looking at me with a bland expression. After the longest five minutes of my life, I cooked the mix until it was clear. Clear as day. Clear as the intentions of a cat focused on a dangling piece of yarn.

The Juice Jamboree

Next came the party. And by party, I mean I added 1 1/2 cups of water, a can of thawed frozen orange juice, Mandarin oranges, and peach slices. The reaction of the ingredients was, well, underwhelming. It was like throwing a surprise party where everyone knew it was coming. But I knew better than to judge a book by its cover, or in this case, a fruit medley by its initial reaction.

I placed it in the fridge to chill—overnight. Yes, you heard it right. This fruit medley was going to have a better beauty sleep than I ever did.

The Berry Bonanza

The next day arrived and it was time to bring in the big guns. The strawberries and bananas. This was the moment when things started to get really exciting. The strawberries and bananas were like the life of the party, adding a touch of color and pizazz to the otherwise calm and composed medley. The flavors started to blend together, creating a harmony that would make a choir jealous.

The Sherbet Showstopper

Now, if you thought we were done, think again. The grand finale was yet to come. The lime sherbet. The crowning glory. The pièce de résistance. I topped each serving of the fruit medley with a generous dollop of lime sherbet and let me tell you, it was like watching a masterpiece come together.

The Fruity Finale

There you have it. A fruit medley saga that serves 8, possibly more if you have guests who are light eaters. The result was a beautiful, refreshing, and hilariously fun dish that was the talk of the town, or at least the talk of my dining table. The combination of the tart tapioca mixture, the juicy oranges, the sweet peach slices, the rich strawberries, the creamy bananas, and the tangy lime sherbet was simply divine.

So, the next time you find yourself in a bit of a cooking rut, just remember, there’s always a Fruit Medley waiting to spice things up. And who knows, you might even have as much fun making it as I did.
