Get ready to fall in love with our Do-Unkles Pumpkin Cake. This cake is perfectly moist, deliciously spiced, and guaranteed to make your autumn season all the more delightful!

Ingredients

  • 2 c. sugar
  • 2 c. flour
  • 2 c. pumpkin
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 2 tsp. soda
  • 1 c. oil
  • 4 eggs
  • 2 tsp. baking powder
  • 1 c. chopped walnuts

Baking Instructions

  1. Combine all ingredients together.
  2. Mix at medium speed for 3 minutes.
  3. Pour into a 9 x 13-inch pan.
  4. Bake at 325° for 45 minutes.
  5. Frost with cream cheese frosting or your favorite.

Unleashing the Pumpkin Cake Beast

Hey, hey! So, my dear Uncle Do (yes, his real name is Uncle Do-Unkle) shared his legendary pumpkin cake recipe with me. I mean, who needs pumpkin pie when you can have Do-Unkle’s Pumpkin Cake? Let’s dive right in!

The Great Gathering of Ingredients

First things first, we need our ingredients. We’re talking about 2 cups of sugar, 2 cups of flour, 2 cups of pumpkin (not the plastic Halloween kind, please), 1/2 a teaspoon of salt (we’re not making sea-water), 2 teaspoons of cinnamon (none of that weak stuff), 1 teaspoon of nutmeg (because we’re fancy), 2 teaspoons of soda (and no, we’re not making a cola cake), 1 cup of oil (not the type you put in your car), 4 eggs (no, not dinosaur eggs), 2 teaspoons of baking powder (it’s not the same as the soda, no matter what anyone tells you), and 1 cup of chopped walnuts (because crunch is life).

The Mix-Up Mayhem

Now that we’ve got our motley crew of ingredients together, it’s time for the mixer to strut its stuff. Combine all ingredients together. Sounds simple, right? But be careful not to summon a flour storm in your kitchen, trust me, it’s not as fun as it sounds. Mix at medium speed for 3 minutes. If you feel like dancing a little jig while it’s mixing, I won’t judge.

Parsing the Pan Problem

Now comes the part where we pour our lovely, albeit slightly messy, mixture into a 9 x 13-inch pan. If you’re a perfectionist, this might be a test of your sanity. It’s never pretty, but as long as it all gets in there, we’re golden!

Baking the Beast

Alright, into the oven it goes! Bake at 325° for 45 minutes. That’s just enough time to clean up the kitchen, or if you’re like me, hide all the evidence under the sink and deal with it later.

Frosting Fiasco

After the baking time is up, and you’ve managed to resist the heavenly smell wafting from your kitchen (kudos to you), it’s time to frost. You could use cream cheese frosting, or whatever your favorite frosting is. I once tried using guacamole because it was my current favorite. Don’t make the same mistakes I did.

Walnut Wonders

Sprinkle the top with the chopped walnuts to add that extra bit of crunch. Because who doesn’t like a bit of crunch in their cake, right? If you’re not a fan, well… more power to you, but you’re missing out!
