When it comes to salads, I must confess that I have a soft spot for classics with a twist. And what could be more classic and twisty than a Kraut Salad? This German staple has been gracing dining tables for centuries, and it’s not hard to see why. Packed with kraut (that’s fermented cabbage for the uninitiated), celery, onion, green pepper, and pimento, it’s a riot of flavors and textures that never fails to delight. The kraut brings a tangy punch that’s beautifully balanced by the sweetness of the sugar and the sharpness of the vinegar. And let’s not forget the salad oil, which binds everything together and adds a lovely smoothness to each bite. The best part? It’s incredibly easy to make! A bit of chopping, a quick toss, and a patient wait while the flavors mingle and marinate in the fridge. Ingredients

  • 1 (No. 2 1/2) can kraut
  • 1 c. chopped celery
  • 1 c. chopped onion
  • 1 c. chopped green pepper
  • 1 (4 oz.) jar chopped pimento
  • 1 c. sugar

  • 1/2 c. white vinegar
