Ingredients

  • 1 medium chicken
  • 1 can (12) soft tortillas
  • 1 large chopped onion
  • 1 large chopped green pepper
  • 1 can mushroom soup
  • 1 can cream of chicken soup
  • 1 can tomatoes and green chilies
  • 1/2 tsp. chili powder
  • 1/2 tsp. garlic salt
  • 1 lb. Cheddar cheese, grated

Baking Instructions

  1. Boil chicken; bone and cut up meat.
  2. To the meat, add onion and green pepper.
  3. Mix soups, tomatoes, chili powder and garlic salt.
  4. Dip each tortilla in chicken broth, then in a buttered 9 x 12-inch baking dish.
  5. Place a layer of tortilla, 1/2 the chicken, 1/2 the soup mixture and 1/2 cheese.
  6. Repeat layers; bake 30 to 40 minutes in 350° oven until cheese melts.

The Great Chicken & Tortilla Casserole Conundrum

Let me tell you about the time I attempted to make a *Chicken and Tortilla Casserole*. Now, I don’t want to brag (okay, maybe just a little), but cooking is my jam. So, when I decided to tackle this particular dish, I thought, “How hard could it be?” Famous last words, right?

It was as if it knew it was about to be part of something delicious and just accepted its fate.

The Soup Mix-Up

Now, let’s talk about the soups. Mixing mushroom soup and cream of chicken soup shouldn’t be difficult, right? But, no one told me they were going to look so… similar. I was like a contestant on a cooking game show, trying to figure out which was which. Add in the tomatoes, chili powder, and garlic salt, and I had myself a real culinary mystery on my hands.

The Tortilla Trials

Dipping tortillas in chicken broth was next. Let’s just say there were tortillas flying everywhere! I felt like a short-order cook at a busy diner, flipping tortillas instead of pancakes. And then came the layering. It was like building a cheesy, gooey, tortilla skyscraper. The key, I discovered, is balance. Too much chicken on one side, and your casserole will look like the Leaning Tower of Pisa.

The Great Cheese Avalanche

Finally, the cheese! Ah, the glorious, grated Cheddar cheese. I’ll be honest, I may have gotten a little carried away. It was like a cheese avalanche hit my casserole. But can you ever have too much cheese? I think not.

Baking: The Final Frontier

After all that, I popped the casserole into a 350° oven and waited. And waited. And did I mention waiting? It felt like an eternity before that cheese finally melted. But when it did… oh, boy! It was worth every hilarious, messy, chaotic moment.

So, there you have it. My attempt at making a Chicken and Tortilla Casserole. It was a wild ride, but in the end, I had a delicious dish, a kitchen that looked like a food fight had taken place, and one heck of a story to tell.
