Growing up, I remember my mom whipping up a batch of Chicken Casserole whenever we needed a bit of comfort. Indeed, this dish is the epitome of comfort food. This recipe has been passed down through generations in my family, and I am delighted to share it with you. This Chicken Casserole is made with ingredients like cooked chicken, celery, rice, mayonnaise, cream of chicken soup, lemon juice, and onion. Optional ingredients include hard-boiled eggs, water chestnuts, butter, almonds, and corn flakes. What I love most about this dish is its versatility. You can add or omit ingredients according to your preference. The creamy texture and hearty flavors make this dish a crowd-pleaser. Ingredients

  • 4 c. cooked chicken
  • 1 c. chopped celery
  • 1 c. cooked rice
  • 3/4 c. mayonnaise
  • 1 can cream of chicken soup
  • 1 Tbsp. lemon juice
  • 3 Tbsp. chopped onion
  • 3 hard-boiled eggs
  • 1 can water chestnuts (optional)
  • 3/4 to 1 stick butter
  • 1/2 c. slivered almonds (optional)
  • 1 c. crushed corn flakes

Baking Instructions

  1. Mix first nine ingredients.
  2. Saute 5 minutes butter, almonds and corn flakes.
  3. Bake at 350° for 35 minutes.
  4. Makes 4 to 6 servings.
