Easy and Delicious Chicken Breasts With Wild Rice Recipe

This Chicken Breasts With Wild Rice recipe is an easy-to-make, hearty, and satisfying meal that the whole family will love. It’s perfect for a midweek dinner when you want something delicious and nutritious.

Ingredients

  • 1 3/4 c. quick cooking long grain and wild rice or plain rice
  • 1 (10 3/4 oz.) can condensed cream of mushroom or chicken soup (undiluted)
  • 1 (10 3/4 oz.) can French onion soup (undiluted)
  • 2 1/2 oz. jar sliced mushrooms (undrained)
  • 1/2 c. water
  • 4 chicken breasts
  • 2 Tbsp. melted butter or margarine
  • 1/4 c. cornflake crumbs or cracker crumbs

Cooking Method

  1. Combine first 5 ingredients together.
  2. Pour into greased 9 x 13-inch microwave dish.
  3. Lay chicken breasts on top of rice mixture, with heavy side of breasts at corners of the dish.
  4. Brush with melted butter or margarine and sprinkle evenly with cornflake crumbs.

Today, my worthy adversary is none other than the chicken breast, a notoriously bland piece of poultry with a potential as vast as my ever-expanding recipe collection.

The Gathering of the Ingredients

First up, I had to gather my allies. The warriors of flavor, if you will. I reached for the 1 3/4 c. of quick cooking long grain and wild rice. The wild rice, my friends, is the key here. It’s like that unpredictable friend who might show up at your party with a mariachi band… or a pet iguana. You just never know, but either way, it’s gonna be interesting.

Next, we have the 1 (10 3/4 oz.) can of condensed cream of mushroom soup. Condensed cream, so rich and creamy, like a cashmere sweater for your taste buds. And speaking of taste buds, let’s not forget about the 1 (10 3/4 oz.) can of French onion soup. It’s like a flavor bomb, ready to explode in a spectacular shower of deliciousness.

The Battle of the Ingredients

I then grabbed the 2 1/2 oz. jar of sliced mushrooms (undaunted by their extra juice), 1/2 c. of water, and 4 chicken breasts. Now, you might be thinking, “But food knight, why are you including bland chicken breasts in your flavorful feast?” Well, my friends, that’s because we’re about to jazz them up.

Here’s where things got a little… buttery. I took 2 Tbsp. of melted butter (because let’s face it, everything’s better with butter), and 1/4 c. of cornflake crumbs. Yes, you heard me right. Cornflake crumbs. It’s like a morning cereal and dinner entrée had a love child.

The Conquering of the Chicken

Now, for the moment of truth. The chicken breasts lay on top of the rice mixture, their heavy sides at the corners of the dish. They stared at me defiantly, daring me to make them flavorful. I brushed them with the melted butter, the golden liquid glistening in the kitchen lights. Then, I sprinkled them evenly with the cornflake crumbs, like a fairy scattering pixie dust. The chicken breasts transformed before my eyes, from bland pieces of poultry to tantalizing treats.

The Final Showdown: The Microwave

Into the microwave dish they went, this motley crew of ingredients. As I closed the microwave door, I could almost hear the chicken breasts whisper, “Bring it on.” And bring it, I did. The smell of the chicken, mushrooms, wild rice, and onion soup wafted through my kitchen, a tantalizing promise of the feast to come.

The Verdict

When the microwave dinged, I was filled with anticipation. Had I conquered the chicken breast, or had it bested me? I pulled out the dish, the steam rising to reveal the transformed ingredients. The chicken breasts were juicy and flavorful, the wild rice was perfectly cooked, and the mushrooms added a nice earthy touch. The cornflake crumbs provided a delightful crunch, like a surprise party for your mouth.
