How to Make Cherry Topsy-Turvy Pudding from Scratch

Hello, fellow food lovers! Today, I am excited to share with you one of my absolute favourite recipes: Cherry Topsy-Turvy Pudding. This divine dessert is a wonderful twist on the traditional pudding, featuring tart cherries in a sweet, fluffy base. Originating from the classic English ‘upside-down’ cakes and puddings, this dessert is a nostalgic nod to my childhood when my mother used to bake this for us. The tantalising combination of cherries and sugar creates a delightful contrast which is sure to make your taste buds dance with joy. What I love most about this recipe is its simplicity. It only requires a handful of ingredients, most of which you probably already have in your pantry. Plus, it’s a great way to make use of canned cherries during off-seasons. Ingredients

  • 2 Tbsp. butter
  • 1 1/4 c. sugar, divided
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 3/4 c. milk
  • 1 1/2 c. canned tart cherries (reserve the juice)
  • 1/4 c. cherry juice

Baking Instructions

  1. Cream together butter and 1 cup sugar.
  2. Sift together flour, baking powder and salt.
  3. Add alternately with milk to creamed mixture.
  4. Pour into greased casserole dish.
  5. Combine cherries with remaining 1/4 cup sugar and 1/4 cup reserved cherry juice.
  6. Heat cherry mixture and pour over batter.
  7. Bake at 350° for 35 to 40 minutes.
  8. Serves 6.

Once Upon a Cherry Pudding…

In the line-up, we got the usual suspects: **2 Tbsp. butter**, **1 1/4 c. sugar** (divided, they’re not all best friends, apparently), **1 c. flour**, **1 tsp. baking powder**, **1/8 tsp. salt** (a pinch, a smidge, a teeny-weeny bit), **3/4 c. milk**, and our star of the show, **1 1/2 c. canned tart cherries**. Remember to reserve the juice. You’ll need **1/4 c. cherry juice**. It’s like a crime thriller, but all the suspects are edible and delicious.

The Butter and Sugar Tango

First things first, we need to cream together the butter and 1 cup of sugar. Now, this is not a dance for the faint-hearted, my friends. It’s a high-energy, full-contact sport. But don’t worry, the butter and sugar are pros at this. They’ll become smoother than a Sinatra serenade in no time.

The Sifting Saga

Next, it’s time to sift together the flour, baking powder, and salt. If you’ve never sifted before, let me tell you, it’s like a snowfall in the kitchen. Only, instead of snowflakes, it’s flour. And instead of freezing cold, it’s… well, room temperature. You get the picture. Plus, it gives your arms a workout. Who needs the gym when you have baking?

The Milk Mediation

Now you’re going to add the flour mixture and milk alternately to the creamed butter and sugar. This is like a peace treaty negotiation between the dry and the wet ingredients. The milk is the mediator. It keeps the peace and ensures everyone mixes well together. Pour this harmonious blend into a greased casserole dish. And just like that, you’re one step closer to pudding paradise.

The Cherry Coup

Here’s when the cherries come into play. Combine them with the remaining 1/4 cup sugar and the 1/4 cup reserved cherry juice. Heat this mixture and pour it over the batter. It’s like a cherry coup, overthrowing the creamy batter dictatorship. And trust me, it’s a coup you’ll want to support.

The Baking Ballet

Now, the grand finale. Bake this baby at 350° for 35 to 40 minutes. This part is like a ballet, a slow dance where flavors mingle, the sugar caramelizes, and the cherries get all cozy in their warm batter blanket.

Voila! You’ve successfully navigated the topsy-turvy world of Cherry Pudding. It’s a wild ride, full of laughter, a little bit of mess, and a whole load of delicious.
