Ingredients

  • 3 beaten eggs
  • 2 c. sugar
  • 1 c. oil
  • 1 small can crushed pineapple
  • 2 tsp. vanilla
  • 1 c. grated carrots
  • 1 1/2 tsp. cinnamon
  • 1 tsp. soda
  • 1/4 tsp. salt
  • 3 c. flour
  • 1 c. chopped nuts

Baking Instructions

  1. Mix all ingredients well.
  2. Bake 1 hour at 350° in two loaf pans lined with waxed paper or foil.
