That’s exactly what these Spinach Squares will do to you! I fell in love with these little green gems at a potluck party and I’ve been making them ever since. The combination of the earthy spinach with the sharpness of Cheddar cheese, beautifully encased in a light, fluffy square, is just divine. Originating from the vegetarian cuisine, they’re a great way to incorporate greens into your diet. What makes this recipe even more special is its versatility. You can have it for breakfast, pack it for lunch, serve it as a party appetizer, or enjoy it as a mid-day snack. And the best part? It’s super easy to make! With just a handful of ingredients and a little bit of time, you can whip up these delicious Spinach Squares in no time. The key to getting this recipe right is in the baking. Ingredients

  • 1 c. all-purpose flour
  • 1 tsp. baking powder
  • 2 eggs, beaten
  • 1 c. milk
  • 1/4 c. melted butter or margarine
  • 1/2 c. chopped onion
  • 1/2 c. shredded Cheddar cheese
  • 1 (10 oz.) pkg. chopped spinach, thawed and drained

Baking Instructions

  1. In a large bowl, combine flour, salt and baking powder.
  2. Stir in beaten eggs, milk and butter.
  3. Add remaining ingredients and stir until moistened.
  4. Pour into lightly greased 9 x 13-inch pan. Bake at 350° for 35 minutes.
  5. Cut into 1-inch squares.
  6. Makes 2 dozen.

The ‘Spinach Square’ Saga

Oh boy, gather ’round folks, because it’s time to talk about that fateful day I decided to try my hand at making Spinach Squares. Spoiler alert: It was a hilariously delicious roller coaster of culinary chaos.

The Gathering of Ingredients

First things first, it was time to gather my ingredients: 1 c. all-purpose flour, 1 tsp. baking powder, 2 eggs (beaten like they owed me money), 1 c. milk, 1/4 c. melted butter (or margarine if you’re feeling rebellious), 1/2 c. chopped onion, 1/2 c. shredded Cheddar cheese, and 1 (10 oz.) pkg. of chopped spinach, thawed and drained. Sounds simple enough, right?

The Battle with the Flour

Great! Now, onto the first step: combining the flour, salt and baking powder. Now, let me just say, whoever invented the concept of measuring cups for flour was a true genius. The simple task turned into a white powdery blizzard that got everywhere, including the dog. The dog, by the way, was not amused.

The Great Mixing

Now that my kitchen looked like a winter wonderland, it was time to stir in the beaten eggs, milk and butter. This was when I learned a valuable lesson: melted butter and cold milk do not mix. It was like watching a buttery figure-skating competition with the butter performing a perfect triple axel right out of the bowl.

Adding the Rest of the Gang

Once I managed to reign in the rogue butter, it was time to add the remaining ingredients and stir until moistened. My heart was pounding as I saw the shredded Cheddar cheese, chopped spinach, and chopped onion plunge into the gooey mixture. It was a sight to behold, folks.

The Oven Beckons

Next, it was time to pour the batter into a lightly greased 9 x 13-inch pan and bake at 350° for 35 minutes. I set the timer and crossed my fingers, hoping the oven gods would be kind to my creation.

The Final Cut

After what seemed like an eternity, the timer dinged, and it was time to cut into those delicious squares. The smell was heavenly, and the spinach squares looked like little green gems of cheesy goodness.

The Tasting

Finally, the moment of truth. The first bite was a whirlwind of flavors. The savory Cheddar cheese, the fluffy flour mixture, and the tang of the chopped spinach all danced together in a symphony of taste. Despite the comedy of errors that was the cooking process, the spinach squares were a hit!
