There’s something incredibly satisfying about a good salad. That fresh crunch, the burst of flavors, the mingling textures… it’s a culinary experience that is hard to beat. But have you ever thought about taking your salad game to the next level? That’s exactly what we’re doing today with this scrumptious Cornbread Salad! Now, you might be thinking, ‘Cornbread in a salad? Really?’ And to that I say, ‘Absolutely!’ This dish is a delightful twist on your traditional salad, combining the comforting warmth of cornbread with the freshness of a variety of veggies. The result? A salad that’s not only delicious but also satisfying and filling. I absolutely adore this recipe because it’s so versatile. You can serve it as a side dish at your next barbecue, or make it the star of your lunch. Plus, it’s super easy to make! So, if you’re ready to shake up your salad routine, let’s dive into this amazing Cornbread Salad recipe!

Ingredients

  • 2 pkg. Jiffy cornbread mix, cooked, cooled and crumbled
  • 1 1/2 c. chopped onion
  • 1 medium green pepper, chopped
  • 3 medium firm tomatoes
  • 8 to 10 slices bacon, cooked, drained and crumbled
  • 1 1/2 c. cubed light Velveeta cheese
  • 1 1/2 c. salad dressing or mayo
  • 2 Tbsp. mustard
  • salt and pepper to taste

Salad Assembly

  1. Mix well and let set overnight.
  2. Will make 2 quarts and 1 pint.
  3. You can cut this in half.

The Cornbread Salad Chronicles

Ah, Cornbread Salad. Sounds weird, right? But trust me, this is a dish that will make your taste buds do a happy dance. You know, like the one you do when your favorite song comes on the radio? Yeah, that one.

The Gathering of the Ingredients

Before we dive in, let’s talk about the ingredients. First off, you’ll need 2 packages of Jiffy cornbread mix. You’ll also need 1 1/2 cups of chopped onion, trust me, your eyes will thank you later. This is what makes the salad creamy and dreamy. And lastly, you’ll need 1 1/2 cups of salad dressing or mayo, 2 tablespoons of mustard, and salt and pepper to taste.

The Great Cornbread Mix Up

Now, let’s start with the cornbread mix. You’re going to cook it, cool it, and then crumble it. It sounds more complicated than it is, I promise. But hey, if you can make it through this step, you can make it through anything.

Chop Chop, It’s Veggie Time

Next, you’re going to chop up your onion and green pepper. This is where the tears might start to flow, but not due to any emotional upheaval. Just the onion doing its thing. Stay strong, my friend.

Tomato Tossing and Bacon Bliss

Moving on to the tomatoes, you’re going to want to chop those up too. And then, it’s bacon time. Cook it, drain it, and crumble it. Just try not to eat all of it before it makes it into the salad. I know, it’s a hard task, but I believe in you.

Cheese, Please!

Next, cube that Velveeta cheese. It’s light, so don’t feel guilty about enjoying a piece… or three. I’m not judging.

Mix It All Together and…

Now, it’s time to mix all of these ingredients together. Then, add your salad dressing or mayo, mustard, and salt and pepper. Stir it all up and let it set overnight. Yes, overnight. The anticipation will make it taste even better, trust me.

Patience is a Virtue

This Cornbread Salad recipe will make 2 quarts and 1 pint. But if you’re not feeding an army, don’t worry, you can cut this recipe in half. Just don’t cut the amount of bacon in half. That would be a crime against humanity.
