How to Make the Perfect Coconut Pecan Frosting

Let’s talk about frostings, specifically, Coconut Pecan Frosting. I have a deep-seated love for this frosting recipe. It’s creamy, nutty and it’s really easy to make. I love how the sweetness of the coconut blends beautifully with the rich, earthy taste of pecans. It’s like a match made in heaven. Frosting, as we all know, can make or break a cake. It adds moisture, flavor, and sweetness. And Coconut Pecan Frosting does all of that and more. It adds a unique texture and flavor profile that you wouldn’t get from your usual frostings. This recipe has a Southern American origin, popularly used for German Chocolate cakes. But trust me, it doesn’t stop there. You can use it to frost cupcakes, carrot cakes, and even brownies. It’s versatility is another reason why I love it. Making this frosting is a simple process. There’s no fancy equipment needed, just a saucepan and a whisk. And the best part? It’s ready in about 20 minutes. Yes, you read that right. All you need is 20 minutes to make the perfect frosting for your bakes. So, what are you waiting for? Let me show you how to make the perfect Coconut Pecan Frosting.

Ingredients

  • 1 c. evaporated milk
  • 1 c. sugar
  • 3 slightly beaten egg yolks
  • 1/2 c. butter
  • 1 tsp. vanilla
  • 1 1/3 c. Angel Flake coconut
  • 1 c. chopped pecans

Frosting Preparation

  1. Mix together first 5 ingredients.
  2. Cook and stir over medium heat until thickened, about 12 minutes.
  3. Add coconut and pecans. Cool until thick enough to spread, beating occasionally.
  4. Makes 2 1/4 cups.

Prologue: The Sweet Beginning

So, there I was in my kitchen, armed with a wooden spoon and a dream, ready to tackle the daunting task of whipping up a batch of Coconut Pecan Frosting. I mean, how hard could it be? It’s not rocket science, right? Oh, how I would soon eat those words…along with a lot of frosting.

The Gathering: A Symphony of Ingredients

The first step, of course, was to gather my ingredients. I had them all lined up like little soldiers ready for battle: 1 c. evaporated milk, 1 c. sugar, 3 slightly beaten egg yolks (they had attitudes, I swear), 1/2 c. butter, 1 tsp. vanilla, and the stars of the show, 1 1/3 c. Angel Flake coconut and 1 c. chopped pecans. The funny thing is, the milk, sugar, egg yolks, butter, and vanilla seemed to be having a little party, all mixed together in a bowl. I guess nobody told them they were about to be cooked.

The Cook-Off: It’s Heating Up

Then came the cooking. I stirred and cooked the mixture over medium heat until it thickened, which took about 12 minutes. Now, those 12 minutes may not seem like a lot, but when you’re stirring a pot non-stop, it feels like eternity. I swear I could see my biceps growing with each stir. Who needs the gym when you have cooking, am I right?

Introducing: The Angels and the Pecans

After the mixture thickened, it was time to introduce the Angel Flake coconut and chopped pecans. Now, if you’ve never tried to stir chunky stuff into a thick mixture, let me tell you, it’s an experience. It’s like trying to convince a cat to take a bath. But after a bit of a struggle, I managed to get them all combined.

The Finale: The Frosting Transformation

Then came the cooling. The mixture had to cool until it was thick enough to spread, and I had to beat it occasionally. Now, this phrase ‘thick enough to spread’ is quite vague. It’s like saying ‘just cook it until it’s done’. But I persevered, constantly checking the thickness like a mad scientist.

Finally, after a gruelling cooking session, I had made it – 2 1/4 cups of Coconut Pecan Frosting. I stood there, gazing at my creation, my heart filled with pride…and my kitchen filled with dirty dishes.

Epilogue: The Sweet (and Nutty) Victory

In the end, was it worth it? Absolutely. The frosting was a hit, and I was a hero…at least in my own kitchen. But the best part? I had a hilarious tale to tell. And let me tell you, nothing brings people together like a good laugh…and a great frosting.

So remember, when life gives you evaporated milk, sugar, egg yolks, butter, vanilla, Angel Flake coconut, and pecans…you make Coconut Pecan Frosting. And if you can, you make a funny story out of it too.
