It’s not your typical ‘salad’, but a delightful dessert that’s a perfect mix of sweet, tangy, and creamy goodness. This recipe has been a family favorite for generations, often whipped up during summer gatherings and potlucks. What makes it even more special is its versatility – it’s great as a dessert, a snack, or even a refreshing side dish on hot summer days. The key to this frozen treat is the combination of sweet marshmallows, tangy Miracle Whip, creamy whipping cream, and the tropical vibe of crushed pineapple. Add some pimento cheese for that surprising twist, and you get a flavor-packed dessert that’s both pleasing to the palate and the eyes. And for my nut-loving friends, feel free to sprinkle some walnuts for that extra crunch! This recipe is super easy to make, and I promise, the result is absolutely worth it. So, why do I love this Frozen Salad, you might ask? Well, apart from its delicious taste, I love the fact that it can be made ahead and stored in the freezer for up to six months. Ingredients

  • 40 marshmallows
  • 1 pt. whipping cream
  • 2 glasses pimento cheese
  • 1 c. Miracle Whip
  • 1 large can crushed pineapple
  • walnuts (optional)

Freezing Process

  1. Cream cheese and add pineapple.
  2. Slice in marshmallows and nuts.
  3. Fold in whipped cream.
  4. Put in cupcake holders in muffin tins.
  5. Freeze.
  6. Will keep up to six months.

The Pursuit of the Perfect Frozen Salad

In my quest for culinary excellence, I’ve stumbled, slipped, and slid. But the day I decided to make a Frozen Salad, that’s when things got real slippery.

Marshmallows, the Unlikely Salad Ingredient

When you think of salad, marshmallows are probably the last thing that pop into your mind, right? But wait until you try this. I had 40 marshmallows on hand, a sight that would make any dentist cringe in despair.

The Cheese Dilemma

I opened my fridge to grab some cheddar, and to my horror, there was none. What greeted me instead were 2 glasses of pimento cheese. Pimento cheese in a salad? Why not? The culinary gods must be crazy today, I thought.

The Miracle of Miracle Whip

Just when I thought things couldn’t get any weirder, the recipe called for 1 c. of Miracle Whip. I can hear you asking, “In a frozen salad? Really?” But trust me, when you’re in the throes of a crazy salad endeavor, you don’t question the universe. You just add the Miracle.

The Pineapple Plot Twist

Next up, crushed pineapple. I had 1 large can of it, and into the mix it went. At this point, I was starting to believe that I was either a culinary genius or a mad scientist. Only time (and my taste buds) would tell.

Adding the Whipping Cream

Now, I had to fold in the whipping cream. I had 1 pt. of it, and as I mixed it in, I felt like a kid playing with food – if said kid had a very odd sense of play.

The Optional Nutty Decision

Walnuts. Optional but highly recommended. Being a daredevil, I decided to go all in. They added a nice crunch to the otherwise creamy texture, making my salad not just a dish, but a sensory experience.

Into the Muffin Tins

The salad was starting to resemble some sort of alien dessert now. I scooped it into cupcake holders in muffin tins, each one looking like a little spaceship ready for take-off.

The Long Freeze

Then came the hardest part – the wait. It had to freeze, and not just for a couple of hours. Oh no, this salad was pulling an all-nighter in the freezer.

The Six Months Longevity

The best part about this salad? It can last up to 6 months. I’m not sure if that’s a blessing or a curse, but one thing’s for sure – I’ll either be enjoying this salad for a long time or have a constant reminder of my culinary bravery.

Tasting the Frozen Madness

The moment of truth arrived. I tasted it. And guess what? It was shockingly good. Or maybe my taste buds had frozen over. Either way, it was an experience I won’t forget anytime soon.

So, what’s the moral of the story? Don’t fear the odd ingredient or the strange recipe. Embrace the madness, for it may lead to the most delicious surprise. And always keep your freezer well-stocked, because you never know when you’ll need to whip up a frozen salad.
