Coffee Cake is a classic sweet treat that has warmed many hearts and kitchens over the years. Its origin dates back to the 17th century in Europe, where it was customary to enjoy a delicious slice of cake with a cup of coffee. Fast forward to today, and the tradition continues, with variations of the Coffee Cake recipe being enjoyed worldwide. This particular Quick Coffee Cake recipe is one that I hold dear to my heart. It’s simple, quick, and absolutely delicious. The combination of the soft, moist cake with the sweet and spicy cinnamon sugar topping is just divine. The beauty of this recipe is that it’s a double recipe, meaning you’ll have plenty of cake to share (or keep for yourself, I won’t judge!).   • 2 c. flour
  • 6 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 c. sugar
  • 1 tsp. salt
  • 2 beaten eggs
  • 1 c. milk
  • 1/2 c. melted oleo or butter

Baking Instructions

  1. Mix all together.
  2. Spread in a 13 x 9-inch pan or two 8-inch pans.
  3. Sprinkle top thickly with sugar and cinnamon (is good with chopped nuts).
  4. Bake at 375° for 15 to 21 minutes.

After spreading the batter in either a 13 x 9-inch pan or two 8-inch pans if you’re feeling fancy, you sprinkle the top thickly with sugar and cinnamon (and if you’re a nut for nuts, feel free to add some chopped ones). Then, into the oven it goes at 375° for 15 to 21 minutes. This is the perfect time to clean up, or, if you’re like me, take a well-deserved break and watch a sitcom episode.
