I remember my mom making this for special occasions, and it was always the star of the dessert table. The beauty of this dessert lies in its simplicity. It’s made with common ingredients like graham crackers, vanilla pudding, and whipped topping, but when combined together, they create a dessert that’s nothing short of magical. The creamy pudding and whipped topping are sandwiched between layers of crunchy graham crackers, and the whole thing is topped off with a rich chocolate glaze. It’s a delightful contrast of textures and flavors that never fails to impress. But what I love most about this dessert is how easy it is to make. Ingredients

  • 20 (about) graham crackers
  • 2 (4 oz.) pkg. vanilla instant pudding mix
  • 3 1/2 c. milk
  • 8 oz. whipped topping
  • 2 pkg. Choco-bake
  • 2 tsp. light corn syrup
  • 2 tsp. vanilla
  • 3 Tbsp. margarine, softened
  • 1 1/2 c. confectioners sugar
  • 3 Tbsp. milk

Baking Instructions

  1. Line a buttered 9 x 13-inch serving dish with half the graham crackers.
  2. Beat pudding mix and 3 1/2 cups milk in mixer bowl for 2 minutes.
  3. Fold in whipped topping.
  4. Layer half the pudding mixture, remaining graham crackers and remaining pudding mixture in prepared dish.
  5. Chill for 2 hours.
  6. Combine Choco-bake, corn syrup, vanilla and margarine in bowl; beat well.
  7. Add confectioners sugar and 3 tablespoons milk alternately, beating well after each addition.
  8. Spread over dessert.

The Chocolate Finale

Finally, it was time for the grand finale – the Choco-bake. I combined 2 packages of it with 2 teaspoons of light corn syrup, 2 teaspoons of vanilla, and 3 tablespoons of margarine. As I beat this mixture, I felt a bit like a mad scientist, creating a chocolatey elixir of delight. Then, in went 1 1/2 cups of confectioners sugar and another 3 tablespoons of milk, added alternately while continuing to beat. The result was a shiny, silky, chocolaty dream. It felt like I had just made the dessert equivalent of a supermodel.

The Final Touch

As a finishing touch, I spread the chocolate mixture over the dessert, like a royal robe. It was a sight to behold. The eclair dessert, in all its glory, was ready. I had done it. I had taken on the grand eclair affair and had emerged victorious.
