Craving for a sweet, creamy dessert? This Banana Cream Pie recipe is just what you need! Made with a rich custard, fresh bananas, and topped with a dollop of whipped cream, it’s the perfect dessert for any occasion.

Ingredients

  • 2 1/2 c. milk
  • 1/4 c. heavy cream
  • 2 egg yolks
  • 2/3 c. sugar
  • 4 Tbsp. cornstarch
  • 2 tsp. vanilla
  • 3 Tbsp. butter (room temperature)
  • 1 or 2 sliced bananas

Baking Instructions

  1. Whisk together the milk, cream and egg yolks.
  2. Combine the sugar and cornstarch in heavy saucepan.
  3. Whisk in the yolk mixture and cook over medium heat, stirring occasionally, for 5 minutes. Then stir the mixture constantly until it comes to a boil, about 7 minutes more.
  4. Boil, stirring, 1 minute.
  5. Remove the saucepan from heat and stir in the vanilla, butter and bananas.
  6. Pour into baked pie shell and smooth top.
  7. Finish with meringue or whipped cream topping.

The Saga of the Banana Cream Pie

Guess what? Today, I decided to make a Banana Cream Pie. Now, I know what you’re thinking. “You? Making a pie? Isn’t that something you’d usually order at a diner after a questionable meatloaf dinner?” Well, my friend, this pie is more than just diner fare. Plus, I’ve got a kitchen, a love for buttery, creamy desserts, and an unseemly amount of time on my hands. So let’s get to it!

The Creamy Dreamy Mixture

First things first, I whisked together 2 1/2 cups of milk, 1/4 cup of heavy cream, and 2 egg yolks. This is where it all begins – the backbone, the foundation, the Beyoncé of our Banana Cream Pie: the creamy filling. Now, you might be wondering why heavy cream. Well, let’s just say it’s the secret weapon for a velvety smooth filling that’ll make you want to dive in head-first (not advisable, by the way).

The Sugar Rush

Next up, I combined 2/3 cup of sugar and 4 tablespoons of cornstarch in a heavy saucepan. I like to call this step “The Sugar Rush” because, you know, sugar gets you excited and cornstarch is…there too. I mean, every Destiny’s Child needs a Kelly and a Michelle, right?

The Whisking and Waiting

After that came the whisking and waiting. I whisked in the creamy dreamy mixture (milk, heavy cream, egg yolks) into the sugar rush (sugar, cornstarch) and cooked it over medium heat. It’s all about patience here. Stir occasionally, let the heat do its magic, and maybe do a little dance around the kitchen. Just keep an eye on that clock, we’re aiming for 5 minutes. After that, stir constantly until it comes to boil, about 7 minutes more. The suspense!

The Boiling Point

Now, the boiling point isn’t just a metaphor for the moment I almost lost my patience. It’s an actual step. After the mixture started bubbling like a witch’s cauldron, I kept stirring for another minute. It might seem like overkill, but trust me, it’s necessary. This is the moment when all those ingredients finally come together to form a glorious, shiny, thick (and hot!) concoction.

The Final Countdown

After the boiling point, I removed the saucepan from the heat and stirred in 2 teaspoons of vanilla, 3 tablespoons of butter (room temperature, mind you), and 1 or 2 sliced bananas. This part felt like the climax of a dramatic movie. The vanilla swirled in like a tornado, the butter melted into a golden pool, and the bananas… well, they just sat there and took it. But that’s okay, we love them anyways.

The Great Pour

Then came the great pour. I poured the mixture into a baked pie shell and smoothed the top. It was satisfying, like watching one of those oddly soothing sand-pouring videos on the internet. But with more risk of burning your fingers.

The Sweet Ending

Finally, the sweet ending. I finished the pie with a meringue or whipped cream topping. Because let’s face it, a Banana Cream Pie without a fluffy, sweet hat is just a naked Banana Cream Pie. And that’s just not as much fun, is it?

So there you have it, folks. The saga of the Banana Cream Pie. A tale of milk, heavy cream, egg yolks, sugar, cornstarch, vanilla, butter, and bananas. A tale of patience, suspense, and the magical power of whisking. A tale that ends with a darn tasty pie. Now, if you’ll excuse me, I have a date with a piece of pie and a fork.
