10 Minute Peanut Brittle: A Quick and Delicious Dessert Recipe

There’s something truly magical about peanut brittle. Those crunchy bits of peanut ensnared in a sweet, glassy sugar matrix never fail to bring a smile to my face. But, like many others, I’ve always been intimidated by the thought of making candy at home. That’s until I came across this 10 Minute Peanut Brittle recipe. This recipe is a game changer, my friends! It’s ridiculously easy to make, takes very little time, and the end result is absolutely delicious. Not to mention, it’s a fun treat to make with the kids. All you need is a few basic ingredients, a microwave, and in just 10 minutes, you’ll have a batch of homemade peanut brittle that rivals any store-bought version. Plus, I’ve got a few tips and tricks up my sleeve to ensure that your peanut brittle comes out perfect every time. So, buckle up and let’s get started on this sweet adventure!

Ingredients

  • 1 c. sugar
  • 1/2 c. light corn syrup
  • 1/4 tsp. salt
  • 1 to 1 1/2 c. raw peanuts
  • 1 Tbsp. butter or margarine
  • 1 tsp. vanilla
  • 1 tsp. soda

Microwave Cooking

  1. In 2-quart casserole (I use 2-quart measuring cup), mix the sugar, syrup and salt.
  2. Microwave on High for 5 minutes.
  3. Stir in peanuts.
  4. Microwave on High for 2 to 6 minutes or until syrup and peanuts are lightly browned, stirring after every 2 minutes of cooking time.
  5. Stir in butter, vanilla and baking soda until light and foamy.
  6. Spread to 1/4-inch thickness on a large well-buttered cookie sheet.
  7. When cool, break into small pieces.

Well, hello there, fellow food enthusiasts! Brace yourselves for the roller-coaster ride of my latest culinary escapade. It’s full of sweet highs, salty lows, and nutty twists. You’re going to love it. I promise.

The Sweet Beginning

Every great story starts with sugar, and this one is no exception. Our tale begins with one cup of the sweet stuff, half a cup of light corn syrup (the lighter, the better), and a pinch of salt. Well, not a pinch exactly. To be precise, it’s about a quarter of a teaspoon. On a chilly Tuesday night, I found myself in my kitchen, armed with these three ingredients, a microwave, and a 2-quart measuring cup that doubles as a casserole dish. Yes, you heard that right. I’m a multi-tasking marvel.

The Microwave Magic

Now, microwaves and I have a complicated relationship. We’ve been through a lot together – the good, the bad, and the downright explosive. But, this time, it was as if the microwave gods were smiling down on me. I mixed my sugar, syrup, and salt in my handy-dandy casserole-cum-measuring cup and zapped it on high for five minutes. The next step was to stir in the peanuts. Now, the recipe called for raw peanuts, between one to one and a half cups, but I went all in and used the full one and a half cups. Go big or go home, right? Back to the microwave they went, for another two to six minutes until the syrup and peanuts were lightly browned. And let me tell you, stirring that sticky, nutty mess every two minutes was a workout. Who needs the gym when you have peanut brittle?

The Finishing Touches

Next up, we have butter and vanilla. I added a tablespoon of butter (or was it margarine?) and a teaspoon of vanilla. Then, for the pièce de résistance, a teaspoon of soda. The moment I stirred them in, the mixture became light and foamy. It was like watching a delicious, sugary science experiment.

The Cool Down

After all that excitement, it was time to cool down. I spread the mixture onto a large, well-buttered cookie sheet. I wish I could tell you that I achieved the perfect quarter-inch thickness, but let’s just say my ruler skills need some work. Once it was cool, I broke it into small pieces. And voila! My homemade 10-minute peanut brittle was ready.

So, how did my quick and easy peanut brittle turn out? Well, let’s just say it was a hit. It was the perfect combination of sweet, salty, and nutty. And the best part? It didn’t even stick to my teeth!
